Apple & Carrot salad.
If you don’t have 5 minutes to spare, then why not get your food processor out of the mothballs and go for this easy-peasy recipe. If you want to do it in advance - and why would you because it only takes a couple of minutes - then you’re gonna need extra lemon juice.
Get equal amounts of large, washed carrots and firm apples. The apples can be sour-ish if you like. Peel them if you must, but at least cut them into halves or quarters and get the cores out.
Use the grating blade of your food processor and grate the lot. Toss into a nice bowl and add a dollop of honey, a good sprinkling of cinnamon powder and a couple of tablespoons of lemon juice. The juice can be squeezed from a fresh lemon or you could cheat and use bottled lemon juice. It will keep the apples from browning.
That’s it. It’s sweet and it can be made into nice shapes or ‘beds’ on the plate.
