Apple Salad Dressing
This is a delicious, if somewhat unusual salad dressing, it won’t compliment all salads, but not all salad dressings do. This one is delicious with any salad that has apple in it, obviously, but also with any light summer salad, it’s good with cheese, especially Feta cheese or Compte cheese. It tastes best when made on the day you will be using it.
To start with you will need 1 cup of Apple Cider, place this in saucepan with 2 tablespoons of Apple Cider Vinegar and bring to boil, once at boiling point turn the heat down and simmer until the liquid has reduced to around 3 tablespoons, then pour into a small bowl and leave to cool.
Once cooled add a small, finely chopped, shallot and a teaspoon of Dijon Mustard, and mix using a hand whisk, once combined slowly add half a cup of olive oil whisking all the time, add salt and pepper to taste.
The result is a fantastic syrupy salad dressing, now all you need to do is pour over your chosen salad.
