Crayfish Salad
Some readers may be aware of the SEOs Fight Fat for charity campaign, which is a great thing to do, for themselves and for their chosen causes. Today I adapted a favourite recipe of mine to give the participants a really tasty and low calorie Crayfish Salad, ideal for a light lunch.
You will need a good handful of mixed green leaves, I used Rocket, Spinach and watercress, place them in a bowl and add a tablespoon of a low fat Lemon Yogurt and mix well. Next take about 30g of cooked crayfish tails and drizzle a little lemon juice over them.
Now you need to put the salad together, place one oatcake on a serving plate, on top place some of the green leaves and crayfish tails, place another oatcake on top and again cover with the green leaves and crayfish. The oatcakes I used were 54 calories each.
I added a little of the leftover Lemon Yogurt to the side of the plate, mainly for decoration but the oatcakes are quite tasty dipped in it.
The whole salad came in at under 250 calories, so you could add more crayfish if you want and still keep it a low calorie meal.
