Avocado Crunch
I know it’s easy to reach for the lettuce and cucumber when you want some crispy crunch in your salad, but it doesn’t have to be that way. Ok this salad has some lettuce, but I promise there is not a cucumber in sight.
First make the dressing, mix the following ingredients well, do this in a processor, or by placing in a jar with a screw top lid and shaking well.
3 tbsp olive oil
1 tbsp cider vinegar
half tsp ready made Dijon mustard
A little runny honey, to taste
Salt and freshly ground black pepper
Put the dressing to one side for now, and you can start to prepare the salad. Take about 100g of smokey bacon and cut into small squares, dry fry (that’s using no oil) in a frying pan until golden brown and crispy, drain on some kitchen towel/paper and put to one side.
Tear two little gem lettuce, washed and drained, into bite size pieces and place in a serving bowl.
Now, take one avocado, peel, stone and slice. Also slice one banana and place both these ingredients into the dressing, gently mix, so they are covered thoroughly with the dressing.
Place the crispy bacon and some cooked chicken, cut into strips into the serving bowl with the lettuce. Over the top pour the avocado, banana and dressing.
Serve straight away, and for some extra crunch serve with some Parmesan crisps.
