BLT Plus
This is my salad version of the popular BLT sandwich.
You will need:
- 1 Little Gem Lettuce
- 1 Tomato
- 3 slices crispy bacon, crumbled
- 1 large spring onion, or a couple of the smaller kind
- Cucumber, I use about an inch or so
- carrot strips, as many as you want
- Cheese, I use a mature cheddar, again as much or little as you like
- Drizzle of Olive Oil and pepper (optional, but I like it)

First, you need to crisp the bacon, or overcook it - but stop before burning it, either under a grill or in a frying pan, I grill mine but whichever you prefer is ok. Leave to go cold then crumble. Put to one side.
The rest is easy, shred the lettuce, cut the cheese, tomato and cucumber into cubes. Cut the carrot and spring onion into slices and mix together in a bowl, add the bacon and mix again. drizzle a little oil over and sprinkle a little pepper if you like or leave plain. I don’t add salt as the bacon provides this.
I like to eat this with warm French bread rolls.
