So, summer seems to be over for us in the UK, ok, it never really started this year, and there weren’t many opportunities to sit outside with a delicious, refreshing fruit salad, but that’s no excuse to stop eating them. Here is a Caribbean Fruit Salad, very different to the fruit salads you may be familiar with but just as tasty and easy to make.
First, make the dressing, mix the following together in a bowl with a whisk, or shake in a jar with a screw top lid…
4 tbsp coconut cream
1–2 tsp light soy sauce
1 lime finely grated rind and juice
Generous pinch chilli powder
A little sugar to taste
Put this to one side while you prepare the fruit. Take half a honeydew melon, deseed and slice into bite size pieces. Slice one banana, peel, stone and slice a ripe peach and lastly toss in a handful of blueberries. Mix the fruits together and pour over the dressing. That’s it, quick, easy and most importantly very very tasty. Enjoy!
NB If you can’t get blueberries, use any other small berry or just leave berries out and add another fruit of your choice.
