Caribbean Fruit Salad

So, summer seems to be over for us in the UK, ok, it never really started this year, and there weren’t many opportunities to sit outside with a delicious, refreshing fruit salad, but that’s no excuse to stop eating them. Avocado Crunch

I know it’s easy to reach for the lettuce and cucumber when you want some crispy crunch in your salad, but it doesn’t have to be that way. Ok this salad has some lettuce, but I promise there is not a cucumber in sight.

Potato Salad

What would a picnic be without some delicious Potato Salad? This classic side dish has been gracing our salads for centuries, and is only spoiled by the horrendous commercial versions found in our supermarket’s chilled sections.

Feta, fruit ‘n’ nut

Fruit ‘n’ nut might make you think of a chocolate bar, but throw some Feta cheese into the equation and you’ve got yourself a Killer Salad. This salad is quick, easy, tasty and good all year round, although buying fresh raspberries out of season can be expensive, but hey, you’re worth it

Beetroot made yummy

Beetroot has been rumoured to have many uses, including medicinal and even as an aphrodisiac. It’s just that – taste-wise – I find it a bit lacking. But that can be fixed with the addition of just the right ingredients. Here’s a salad that can go with almost anything for lunch or dinner.
