Corn and bean side salad

The UK is having some fine weather at present, and consequently the barbeques and salad bowls are out in force, so why not combine the two. Corn and bean salad is a tasty and quick salad recipe and is a perfect side dish for barbequed meat and fish.

You will need 1 can, around 16oz of ready to eat sweetcorn, the same amount of canned, ready to eat, kidney beans. Drain, and mix these together in a bowl. Add to these half a large red onion and half a red bell pepper, both chopped.

For the dressing mix together half a cup of apple cider vinegar, 3 tablespoons of clear honey, a good handful of chopped fresh parlsey and a garlic clove, minced. Season to taste with salt and black pepper.

Pour the dressing over the corn, kidney beans, onion and pepper and leave to marinade for at least 15 minutes before serving. A nice garnish would be a few lime wedges.

    Finally something veganish (except for honey)!

  2. Hm well I suppose you can, I’ve never tried it with lemon juice, what’s wrong with apple cider vinegar?

    Yeah the honey is not vegan, but you can substitute that with Agave Nectar/syrup :)

  4. I simply don’t like vinegar, because it tastes awful.

    Of course, naturally made apple vinegar in small doses is ok.

    But if you ever tried a prepared salad with a huge overdose of vinegar to mask the taste or make it last longer, you’d never add an extra drop of vinegar to your meal.

    Plus, I get headache from lots of [bad, non-apple] vinegar. Dunno why.

  5. Vinegar in any salad dressing should not overpower the other flavours.

  6. That’s the point!
    I had to wash the vinegar out of a few prepaid salads once and it still tasted awful.

    I only buy prepared soy sprouts, because there’s no way I can buy soy beans or sprouts myself (maybe grow soy instead?).

  7. The point is, and the whole point of this blog is to get people to make their own. That way people can tailor each salad/salad dressing to their own tastes :)

    The prepared salad you bought sounds icky.

    Yay, I’ve stumbled across this recipe and now actually do have lots of spare sweetcorn and kidney beans to use, so off I go (I think)!

    Except I’ll probably replace vinegar and honey with lemon juice and brown sugar [syrup] respectively.
