		<description>Yeah, I probably should have added to the article that many people do actually like the taste of Olive oil that has passed its best.  In many parts of the world it is eaten in that state routinely, due to cultural factors, and/or a lack of proper storage conditions.  Many even prefer it that way. But as you said, if you are aging oil on purpose, just check it before use, if you like the taste, great.  If not ditch it. :)</description>
