Feta, fruit ‘n’ nut


Fruit ‘n’ nut might make you think of a chocolate bar, but throw some Feta cheese into the equation and you’ve got yourself a Killer Salad. This salad is quick, easy, tasty and good all year round, although buying fresh raspberries out of season can be expensive, but hey, you’re worth it :)

You’ll need some chopped salad greens, whichever ones you like best. I like to mix colours a little, so I use Romaine lettuce, Radicchio and maybe a handful of Rocket for good measure.

Layer the salad greens in a bowl with some fresh Raspberries, don’t use frozen, they go a bit mushy when defrosted, some toasted chopped walnuts and some cubed Feta cheese.

Now you need to make a dressing, do this in a food processor if you have one, if not use a whisk. Ok, you’ll need…
2 Tbsp. balsamic vinegar
1 Tbsp. honey
1 tsp. Dijon mustard
1/4 tsp. ground black pepper
1/4 cup extra virgin olive oil

Mix the vinegar, honey, mustard and pepper together in a processor or with the whisk, now add the oil in a steady stream, do this slowly, and I do mean slowly. You need to keep mixing/whisking while you add the oil.

Once the oil is throughly blended with the other ingredients pour over the salad, then dig in.

I couldn’t get the oil to really turn into a mayo-like substance. Maybe I should have used a food processor. Was nice enough like this though.

Really great salad this

Glad you enjoyed it, and the dressing is never going to look like mayo, what you are aiming for is the oil to be completely mixed with the other ingredients, and not forming a layer of its own.
