Herbs
Herbs are the quickest and easiest ways of adding flavour to even the simplest of salads, they will delight and excite your taste buds, look visually appealing, and fill your salad bowl with a splendid aroma.
Fresh herbs should ideally be used in your Killer salads, and if you cannot grow your own, you can buy little bags or tubs of fresh herbs in your local supermarket nowadays. Herbs can also be used in dressings and vinaigrettes.
There are no hard and fast rules about which herbs can be used in salads and which can’t. It’s purely down to personal taste. But there are some herbs that really do well in salads, Rocket for instance is an idea salad herb. Basil will complement any dish that has tomatoes in it. If you want a delicate onion go for Chives. If you want to add a splash of colour Red Amaranth would be ideal with its red centered and delicately flavoured leaves.
If you buy fresh cut herbs, always store them away from sunlight, they are best stored loosely in polythene bags in the bottom of your refrigerator.
There are plenty of little gadgets on the market for chopping herbs, but none as good as a sharp Mezzaluna and a wooden chopping board. A Mezzaluna is a chopping instrument consisting of a single or double curved blade with a handle on each end. The name is Italian, meaning half moon, which resembles the shape of the blade.
The trouble with many of the other gadgets sold for chopping herbs is that they squash, rather than chop, the herbs and make them mushy, if you want your herbs to retain as much of their flavour and fragrant oils as possible then use a Mezzaluna and a wooden chopping board
