Hot Spinach Salad


Hot Spinach salad is relatively quick and easy to prepare, it does involve some cooking, but what you end up with is worth the effort, a tasty hot salad.

Firstly you need to fry some bacon in a large frying pan, about 6 slices, which have been cut into 1 inch squares. Fry the bacon until it is crispy. Once the bacon is cooked remove it from the pan using a slotted spoon, so that the bacon drains and the juices from the bacon are retained in the pan. Put the bacon to one side for now.

Add to the frying pan, 1/4 cup of cider vinegar, 3 tablespoons of a good quality olive oil, 1 tablespoon of Soy Sauce, 1 teaspoon of sugar and half a teaspoon of salt. Mix together well and heat until the mixture just begins to boil, then turn off the heat.

Into the pan add about half a pound of Spinach, which has been washed and dried, toss the spinach in the dressing making sure it all gets coated with the dressing, then place in a large serving bowl. The spinach will wilt with the heat of the dressing, that’s normal as another name for this salad is Wilted Spinach Salad.

Finally add the bacon, cooked previously, to the spinach and dressing and mix. Retain a little of the bacon to sprinkle on top.
