Italian summer salad


For an instant taste of the Mediterranean, try this easy salad recipe to create a delicious Italian style summer salad. Yeah I know right now it’s raining cats and dogs, but hey it’s still summer and this salad will brighten any day.

Start by pre-heating the oven to 180C (350F, Gas 4). Take a ciabatta loaf and cut into bite-sizes pieces, place in a bowl and to it add, about 100g of pine nuts, a crushed clove of garlic, and two tablespoons of olive oil. Mix well then place on a baking tray and toast in the oven for about 10 minutes, turn the pieces over half way through cooking. The bread should be golden and crisp.

While the bread is toasting, in a bowl mix together a punnet of cherry tomatoes, chopped in half, a small red onion, finely sliced, and a handful of black olives. Once the bread is toasted add to the bowl and toss gently with the other ingredients.

For the dressing mix together 4 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, and salt and pepper to taste. Mix thoroughly and pour over the salad, toss gently to ensure an even coating of the dressing. Finally, top with a few basil leaves.

This was an excellent salad, I used it with a honey/mustard chicken dish. It was easy to make and full of flavour

I have used this several times in the UK and now in the UAE, it is a very simple recipe which brings back memories of southern France and Italy every time I eat it. Pine nuts are expensive here though! About 8 pounds! Is there a substitute that I could use instead of the pine nuts?

I have tried this with a dry roasted peanuts with tasty results, but you could also use chopped walnuts, almonds or cashew nuts. You could also omit the nuts altogether if they so so expensive, I mean WOW £8 for pine nuts, that’s crazy prices! :)
