I have tried this with a dry roasted peanuts with tasty results, but you could also use chopped walnuts, almonds or cashew nuts. You could also omit the nuts altogether if they so so expensive, I mean WOW £8 for pine nuts, that's crazy prices! :)

Hope that helps

I have used this several times in the UK and now in the UAE, it is a very simple recipe which brings back memories of southern France and Italy every time I eat it. Pine nuts are expensive here though! About 8 pounds! Is there a substitute that I could use instead of the pine nuts?

This was an excellent salad, I used it with a honey/mustard chicken dish. It was easy to make and full of flavour
