This easy recipe for a Mackerel Salad with Mustard dressing is not for those who have shy taste buds, the Mustard dressing is sharp on the palate but adds a nice balance to the fresh Mackerel. This salad is refreshing and full of flavour.
I started by making the salad dressing, mix together half a cup of a good quality Olive Oil with 3 tablespoons of Balsamic Vinegar, 1 crushed clove of Garlic, 3 teaspoons of coarse grain French Mustard and salt to taste.
The Mustard dressing is shown below along with the ingredients for the Mackerel salad.
Shred the Romaine Lettuce, chop 1 large tomato, peel and chop a piece of cucumber, approx 2 inches, mix together and place on the serving plate. Shred one or two fresh smoked Mackerel fillets, making sure the skin and any bones are removed. Sprinkle the Mackerel over the salad along with some crumbled Feta Cheese. Finally drizzle the Mustard dressing over the salad.
