Marinated Courgette Salad


This is a really quick, no cook, low fat salad. It’s great on its own as a healthy light lunch or as an accompaniment to a grilled chicken breast to make it more substantial salad, perhaps for an evening meal.

You will need 1 large courgette, washed and dried. Cut the ends off the courgette, known in the trade as top and tailing. Next you need to use a swivel peeler to slice the courgette into long thin ribbons and place them into a shallow serving dish.

To make the marinade you will need to whisk together, the juice of 1 lemon, 4 tablespoons of extra virgin olive oil and some salt and pepper to season.

Pour the marinade over the courgette ribbons and place in the refrigerator for about 30 minutes to marinade before eating.
