Quick & cheesy


Ok here’s another recipe for when you’re really pressed for time. It involves some chopping but if you use the right knife that’s not really a problem, It’s a salad with only 4 ingredients.

Firstly, chop some lettuce into half-inch strips. You can leave it chunky too, but strips are just easier to eat. Next take a nice chunk of hard, yellow cheese (like Gouda) and dice it. Again, small is better, but it’s really up to you and your cutting skills.

Toss it all into a bowl and add a bit of mayo to take the dryness off and to add a bit of acidity. Finally - and once again I’m cheating - take a good handful of cheesy biscuits like for example Tuc biscuits and crunch them so they make tiny croutons. Only add them to the bowl at the last minute. Which is NOW because you were pressed for time anyway.

hmmmm. yummy. but I prefer lasagna!

No need to skip the lasagna :)

Anyway I’ve made this with crumbled Ritz crackers (which came from a carton that had taken a bit of a beating) and that was very nice indeed. Just use your favourite savoury biscuits/crackers.
