Smoked Salmon Salad
This is a really easy salad recipe, and of course it’s also tasty and satisfying. It took less than 10 minutes to make so is ideal for those days when you are pressed for time and need something quick.
First you need to make the lemon salad dressing, to do this crush one clove of garlic, and combine it with 1/2 teaspoon of salt, and equal amounts of lemon juice and a good quality olive oil. About 1/3 of a cup of each is sufficient for a salad for two people.
For the salad shred about half of a Romaine lettuce, chop a handful of baby corn on the cob, and a handful of mange tout. Toss these together with the lemon salad dressing and place on a serving plate.
To finish the salad arrange some smoked salmon slices over the lettuce, corn and mange tout, and finally sprinkle some crumbled Feta cheese over the top.
